CROSTATA ALLA FRUTTA SECCA

Ingredienti per la pasta frolla:
250 di farina 00
25 g di zucchero
60 g di burro
1 uovo + un tuorlo
1/2 cucchiaino di lievito per dolci
Per il ripieno:
200 g di frutta secca sgusciata (mandorle, nocciole, noci ecc..)
50 g di prugne secche (o uvetta)
50 g di cioccolato fondente
50 g di biscotti secchi
3 cucchiai abbondanti di confettura di fichi
1 chiara d’uovo
1 cucchiaio di rum
Preparazione
1.Iniziate dalla preparazione della pasta frolla:
impastate tutti gli ingredienti previsti dalla ricetta e formate un panetto liscio ed omogeneo. Riponete in frigo per 30 minuti.
2. Nel frattempo dedicatevi al ripieno:
tostate in forno la frutta secca a 180° C per 2 minuti (o su una padella antiaderente), lasciatela raffreddare e tritatela al coltello insieme al cioccolato e ai biscotti. Tagliate anche le prugne e amalgamate tutto con la confettura di fichi, la chiara d’uovo e il rum.
3. Prendete 2/3 della pasta frolla e trasferitela in uno stampo da crostata, farcite con il composto di frutta e cioccolato e ricavate le strisce per la copertura della frolla tenuta da parte.
Infornate a 180° per circa 30 minuti.
Per frutta secca non si intende solo quella essiccata, ma anche quella a guscio esistente in natura come le noci e le mandorle. Spesso è vietata per l’elevato apporto calorico; la frutta secca fornisce dei preziosi nutrienti per l’organismo. Basti pensare agli antiossidanti, ai minerali, alla vitamina C, vitamina A, tiamina e la riboflavina presenti nei mirtilli secchi, nell’uva passa e nelle prugne secche che sono due volte più concentrate rispetto alla frutta fresca.
