Bagels dolci e salati
Cosa sono i bagels?
I bagels sono dei tipici panini americani a forma di anello, assomigliano ai donuts ma non vengono fritti ma cotti al forno dopo essere stati passati in acqua bollente. I bagels possono essere farciti con  formaggio spalmabile, burro salato, salmone affumicato, aringa, gherigli di noci, cheddar a fettine, avocado a fette, tacchino a fette, foglie di lattuga, mela rossa a fettine, erba cipollina. I bagels possono essere gustati a colazione ma anche durante una pausa pranzo. Se invece preferite dei bagels dolci potete farcirli con ricotta, confettura di lamponi o albicocca. Ecco la ricetta dei famosi bagels tanto amati nella Grande Mela.

Ingredienti per l’impasto:
- 500 g  di farina manitoba
- 1 bustina di lievito istantaneo in polvere
- 1 pizzico di sale fino
- 300 g di acqua tiepida
- 2 cucchiai di sciroppo di malto e melassa
- 2 cucchiai di olio d’olivaÂ
Per la prima cottura:
- 4 litri di acqua
- 1 cucchiaio di fecola
- 1 cucchiaio di sciroppo di malto e melassa
- 2 cucchiai di saleÂ
PreparazioneÂ
Lavoriamo nella planetaria la farina, lievito e sale. Aggiungiamo lo sciroppo di malto e melassa, l’olio e, un po’ alla volta, l’acqua. Impastiamo per 10 minuti. Poi copriamo il panetto con la pellicola e lasciamo lievitare fino al raddoppio.
A questo punto, tagliamo l’impasto in 12 parti uguali e ricaviamo dei paninelli tondi. Mettiamoli su una teglia con carta forno e lasciamo lievitare ancora per un’ora. Trascorsa questa seconda lievitazione, buchiamo al centro i paninelli con le mani.
Poi allarghiamo di quanto più possibile il foro in modo da ottenere delle ciambelle e lasciamo lievitare ancora mezz’ora circa.Â

Scaldiamo l’acqua in un tegame, aggiungiamo il sale, loÂ
sciroppo di malto e melassa e la fecola stemperata con un po’ d’acqua.Â
Sbollentiamo le ciambelle per due minuti, scoliamole e trasferiamole in una teglia cosparsa di semola.
Spennelliamo i bagels con l’uovo sbattuto e cospargiamo solo quelli che farciremo con ingredienti salati con i semi di sesamo o di papavero. Inforniamoli a 200°, per 15 minuti poi apriamoli a metà e farciamoli. Quale abbinamento? Per quelli salati, salmone, formaggio spalmabile, avocado, noci e  erba cipollina. Oppure aringa, mela e burro o tacchino, cheddar e lattuga.Â
Per quelli dolci, ricotta e confettura.
