Ciambelle di carnevale
- Le ciambelle di carnevale sono un dolce molto diffuso soprattutto nel Sud Italia. Â L’impasto risulta morbido e soffice e passate, dopo la cottura, nello zucchero semolato, risultano golose e appetitose. Le ciambelle di carnevale possono essere preparate in occasione di una festa in maschera per i bambini ma non solo!!!
Preparazione: 45 minuti

Riposo: 3 ore
                     Ingredienti
- 300 g di farina 00
- 200 g di patate
- 70 g di burro a temperatura ambiente
- 2 uova
- Latte fresco intero q. b.
- 2 cucchiai di zucchero
- 20 g di lievito di birra fresco
- Scorza grattugiata di un limone
- 1Â pizzico di sale
- Zucchero semolato per la copertura
- Olio di arachidi q.b.
                  Preparazione ciambelle di carnevale
- Lessate le patate con la buccia. Scolatele, spellatele e passatele nello schiacciapatate un paio di volte.
- Disponete la farina a fontana sulla spianatoia, aprite le uova all’interno della fontana, quindi aggiungete il burro a pezzetti, le patate schiacciate ancora tiepide, lo zucchero, un pizzico di sale e la scorza del limone.
- Impastate velocemente e appena l’impasto avrà assunto consistenza aggiungere il lievito di birra, sciolto in un pò di latte tiepido.
- Impastate fino a quando l’impasto risulterà liscio e omogeneo. Qualora l’impasto dovesse risultare ancora umido aiutatevi con un po’ di farina, al contrario se dovesse risultare troppo secco aggiungete del latte.
- Ponete l’impasto a lievitare in una ciotola coperta in un luogo caldo, per circa 60 minuti.
- Trascorso il tempo di lievitazione, date all’impasto la forma allungata del diametro massimo di 1,5 cm e ricavatene dei pezzi della lunghezza di circa 10-12 cm.
- Riponete le ciambelle con attenzione su una leccarda foderata di carta forno.
- Coprire con un canovaccio e lasciate lievitare per 1 ora circa.
- Friggete in abbondante olio di arachidi a temperatura di 180° C girandole spesso affinché si dorino da ambo i lati.
- Scolate con l’aiuto di una schiumarola e fatele asciugare su carta assorbente.
- Passate ancora calde nello zucchero semolato.
