Ingredienti per finta lasagna al ragù di verdure
12 fette sottili di pane raffermo
1 cipolla
1 spicchio di aglio
1 carota
1 zucchina
1 patata media
1 costa tenera di sedano
1 ciuffo di basilico
500 g di pomodori pelati
Brodo vegetale
2 mozzarelle
80 g di grana padano grattugiato
Olio extravergine d’oliva
Salee pepe
Preparazione finta lasagna al ragù di verdure
1. Tagliate le mozzarelle a fettine sottili e lasciatele sgocciolare in un colino mentre preparate il sugo. Spellate l'aglio e la cipolla e tritateli. Spuntate la zucchina, raschiate la carota, sbucciate la patata, pulite il sedano, e tagliate tutto a cubetti dimensioni simili.
2.Il ragù. Rosolate per qualche minuto il trito di aglio e cipolla nel tegame con 4 cucchiai di olio, aggiungete i cubetti degli ortaggi tranne le zucchine e fateli insaporire nel soffritto per 5 minuti. Unite i dadini di zucchina, cuocete per pochi istanti, poi bagnate con un filo di brodo caldo e proseguite la cottura per circa 5 minuti a fuoco dolce. Aggiungete i pelati tritati grossolanamente, le foglie di basilico, sale, pepe e cuocete a fuoco medio a tegame coperto per 20 minuti circa, mescolando di tanto in tanto.
3. Ungete la pirofila con un filo di olio, mettete sul fondo uno strato di pane e spennellate con brodo caldo, aggiungete una spolverizzata di grana padano, coprite con uno strato di sugo, mozzarella e altre fettine di pane e spennellateli di brodo. Proseguite con strati di mozzarella, pane, sugo e grana terminando con quest'ultimo. Cuocete in forno caldo a 180° per 25-30 minuti circa finché la superficie sarà dorata.
