Involtini di melanzane con pancetta
Gli involtini di melanzane con pancetta sono un gustoso e sfizioso antipasto. La ricetta prevede le melanzane fritte oppure grigliate alle quali si aggiunge una fettina di pancetta e un ripieno molto saporito. Gli involtini di melanzane con pancetta sono un piatto da preparare in poco tempo e piacciono davvero a tutti. Ottimi per un antipasto, per un buffet, per una gita fuori porta!!
Ingredienti
- Melanzane
- Olio (piuttosto abbondante)
- Sale
- Fettine di pancetta magra
- Mollica di pane (bagnata nel brodo)
- Trito di aglio, prezzemolo e basilico
- 1/2 litro di sugo (facoltativo)
PreparazioneÂ
- Pulite le melanzane;eliminate le due estremità e tagliatele a fette; friggetele immediatamente nell’olio bollente e sgocciolatele non ancora dorate (devono essere tenere); spruzzatele leggermente con sale e tenete da parte. Se non gradite il fritto potete farle grigliate.
- Disponete tante fettine di pancetta magra quanto sono le fette di melanzane.
- Riunite in una ciotola: mollica di pane bagnata nel brodo, ben strizzata e triturata, un trito di aglio, prezzemolo e basilico, un pizzico di sale e un poco d’olio. Amalgamate tutti gli ingredienti.
- Allineate le fettine di pancetta sul tavolo da cucina e mettete sopra ognuna una fetta di melanzana tenera; disponete nel mezzo della fettina di melanzane un poco di ripieno bene mescolato e ripiegate la pancetta e la melanzane su se stesse in maniera che il ripieno rimanga racchiuso.
- Infilzate con molta attenzione gli involtini in 12 spiedini.
- Gli involtini possono essere arrostiti in una padella antiaderente oppure in forno per pochi minuti.Â
- Possono essere arrostiti sulla carbonella se state preparando una giornata in compagnia e all’aperto.
