I muffin salati con verdure sono variante dei muffin solitamente dolci. La ricetta muffin salati con verdure che vi propongo è sfiziosa e inconsueta. E’ stata realizzata in con pisellini, fagiolini, peperone e del formaggio. Naturalmente la scelta delle verdure può cambiare e potete realizzarli anche con delle verdure che vi trovate in casa o quelle che gradite di più. I muffin salati con verdure possono rappresentare antipasto perfetto, un classico aperitivo e sono perfetti per un buffet.

- 12 muffin
Ingredienti
- 1 zucchina
- 12 fagioliniÂ
- 1 cipollottoÂ
- 1 peperone rosso
- Una manciata di piselli
- 1 patata
- 150 g di farina
- 130 ml di latteÂ
- 1 uovoÂ
- 1/2 bustina di lievito istantaneo per torte salate
- 50 ml di olio di semi
- 2 cucchiai di parmigiano grattugiato
- 100 g di formaggio (a scelta fontina, provala, asiago)
- Sale e pepe
Preparazione
- Pulite tutte le verdure, tagliate a cubetti e cuocetele al vapore insieme ai piselli per una decina di minuti, escluso il cipollotto (per la cottura al vapore sistemate le verdure nel cestello. Posate quest’ultimo sul fondo della casseruola, mettete il coperchio e lasciate su fuoco medio in modo che l’acqua mantenga un bollore leggero e costante fino a quando gli ortaggi sono teneri).
- Intanto in una ciotola sbattete l’uovo, l’olio e il latte e amalgamate. Unite la farina setacciata con il lievito, una presa di sale e una di pepe e infine il parmigiano. Mescolate tutti gli ingredienti.
- Tagliate il formaggio a cubetti e unitelo insieme alle verdure al composto,, unite il cipollotto tritato grossolanamente e mescolate.
- Â Versate il composto negli stampi per muffin rivestiti da pirottini di carta, arrivando fino a due passi dal bordo.
- Infornate in forno già caldo a 180° per 20-25 minuti fino a quando saranno dorati.
- Serviteli tiepidi o freddi.
