Patate farcite al gusto affumicato
Ingredienti per 6 persone:
200 g di bacon a dadini,
6 (circa 1,2 Kg) patate grandi di forma ovale
40 g di burro
6 uova
Parmigiano grattugiato
Latte
Provola affumicata
Rosmarino
Sale e pepe
Preparazione
1. Foderate la placca con carta da forno bagnata, strizzata e ben imburrata. Frullate nel robot 100 g di provola a dadi con 60 g di parmigiano e poco latte.
2. Lavate bene la buccia delle patate, sfregandola con lo spazzolino, senza sciuparla. Mettete le patate nella pentola a pressione, unite poco sale e coprite a filo con acqua fredda.
3. Aspettate il sibilo, abbassate la fiamma e cuocete 10 minuti, a fine cottura fate intiepidire le patate e tagliatele a metà per il lungo con il coltello, quindi scavatele delicatamente ottenendo 12 scodelline.
4. Passate la polpa con lo schiacciapatate, lasciandola cadere nella ciotola, dove avrete già messo 100 g di burro morbido a pezzetti. Mescolate finché il burro verrà assorbito.
5. Aggiungete il trito di formaggi, sale, pepe, i tuorli e due terzi di dadi di bacon, sempre mescolando. Rosolate, intanto, 40 g di burro con le foglie di un rametto di rosmarino.
6. Filtrate il burro con il colino e spennellatelo dentro e fuori delle scodelline di patate, insistendo sulla buccia. riempitele con il composto preparato.
7. Guarnite la superficie con ciuffetti di rosmarino e dadini di bacon, irrorando con altro burro e rosolato.
8. Sistemate le scodelline sulla placca e cuoceteli in forno 15 minuti. Servite calde.
