- Penne integrali g:350
- Pomodori ramati: 5
- 1 mazzetto di rucola
- Mandorle sgusciate e pelate g: 80Â
- 1 cipollaÂ
- 2 peperoncini
- Olio extravergine di oliva
- Sale
Preparazione penne con pesto di rucola
- In una padella con l’olio soffriggete la cipolla sbucciata e tritata, disponete pomodori ridotti a cubetti, continuate la cottura per 10 minuti e salate.
- Lavate la rucola, asciugatela, passatela in un tritatutto con metà delle mandorle, i peperoncini e l’olio versato a filo, fino a ottenere uno pesto omogeneo e granuloso.
- Cuocere le penne integrali in acqua salata, scolatele, conditele con il sugo preparato e servite nel piatto da portata con il pesto e le mandorle rimaste.
