La ricetta che vi propongo contiene la ricotta un latticino a basso contenuto lipidico, ricca di calcio e fosforo; le zucchine insieme al parmigiano, al pecorino e agli aromi rendono questo piatto ottimo per tutta la famiglia!!
Ingredienti per 6 persone:
- 6 peperoni gialli, rossi o verdi di dimensione simile
- 1 cipolla
- 1 spicchio d’aglio
- Prezzemolo e origano q. b.
- Zucchine a dadini piccolissimi
- 1 uovo
- 2 cucchiai di parmigiano e due di pecorino grattugiato
- Olio extravergine d’oliva q. b.
- Sale e pepe
Preparazione peperoni farciti alla ricotta
- Tagliate ai peperoni la calotta e tenetela da parte, togliete i semi, lavateli e sbollentarteli in acqua salata.
- Soffriggete nell’olio cipolla, aglio, prezzemolo e origano tritati, e cuocete le zucchine.
- Fate raffreddare e mescolatevi uovo, pangrattato, formaggi, sale e pepe .
- Farcite i peperoni con il composto, ricopriteli con la calotta e poneteli diritti in una pirofila imburrata.
- Coprite con un foglio di alluminio e informate a 170° per circa un’ora.
