La fesa di vitello è una la parte interna della coscia, ha una forma triangolare ed il taglio più grande della parte posteriore del’animale. Ingredienti per fesa di vitello ripiena
- circa 600 grammi di fesa di vitello ben battuta
- 150 g di pangrattato
- 1 porro
- 1 carota
- 1 costa di sedano
- 200 g di mozzarella
- 3 uova
- 1,5 litri di brodo vegetale (anche granulare)
- 30 g di mandorle tritate
- 2 cucchiai di prezzemolo tritato
- 15 semi di finocchio
- 1 spicchio d’aglio
- 12 g di spinaci lessati
- 50 grammi di grana padano
- Burro
- Olio extravergine d’oliva
- Sale e Pepe
Preparazione fesa di vitello ripiena
- Pulite il porro e il sedano, raschiate la carota, lavate e tagliate a dadini quindi portate a ebollizione il brodo, lessatevi la dadolata di ortaggi per 10 minuti circa e scolatela. Tritate fini gli spinaci e fateli insaporire una padella con 30 g di burro e una presa di sale; nel frattempo tritate fine e la mortadella; sbucciate l’aglio e tritatelo; grattugiate il grana.
- Mettete la mortadella in una ciotola con gli spinaci, il pangrattato, le uova, il prezzemolo, i semi di finocchio, il grana e l’aglio. Aggiungete la dadolata di ortaggi scolata e 3 cucchiai del loro brodo di cottura, salate, pepate e mescolate a lungo delicatamente per amalgamare bene tutto senza schiacciare il mix.
- Stendete il composto sulla fetta di fesa, arrotolatela su se stessa e legatela con lo spago da cucina. Sistemate il rotolo in una pirofila, conditelo con 4-5 cucchiai d’olio, sale e pepe e cuocete in forno caldo a 200° per circa 2 ore. Se necessario, aggiungete qualche mestolo di brodo caldo durante la cottura. Tagliate il rotolo a fette e disponetele su un piatto di portata. Filtrate il fondo di cottura e servite in una ciotolina a parte.
