La ricotta è un latticino a basso contenuto lipidico, naturalmente
light adatto per adulti e bambini. E’ di proteine sazianti. A conferirle l’effetto saziante sono le sieroproteine, un tipo particolare di proteine presenti nella ricotta più che in altri
alimenti. Le sieroproteine sono facilmente assimilabili e digeribili, caratteristiche importanti dato che le proteine contengono molti aminoacidi essenziali che il corpo non riesce a produrre da solo.

E’ utilissima per bambini e ragazzi durante la crescita, perché ricca di calcio e fosforo. Rimedio contro l’anemia
Secondo una ricerca, la ricotta contiene 10 volte più vitamina B12 (cobalamina) del latte da cui viene prodotta. La B12 è fondamentale per la produzione dei globuli rossi e la sua carenza può causare anemia. Il consumo regolare di ricotta garantisce un buon apporto di questa preziosa vitamina idrosolubile, presente solo negli alimenti di origine animale e necessaria anche per ridurre l’omocisteina, un fattore di rischio cardiovascolare.
La ricotta non è un formaggio
La ricotta non è un formaggio ma un latticino, perché si produce
con il siero del latte che è sottoprodotto della cagliata. E’, infatti,
ricca di proteine del latte e lattosio, per cui non è adatta ai soggetti allergici o intolleranti, anche perché, a volte, viene aggiunto ancora latte puro e panna per renderla più cremosa e saporita.

Chi è a dieta dovrebbe preferire la ricotta di latte vaccino rispetto a quella di pecora, è più saporita ma anche meno leggera (157 Kcal per 100 g) È proprio il siero del latte di pecora a essere più grasso, quindi attenzione anche ai prodotti misti, se non si vuole esagerare con le calorie.

Cremosa morbida e delicata, si ottiene dal siero del
latte di bufala. Quella campana è un prodotto Dop.
Ricotta salata
Di mucca o di pecora, si arricchisce con il sale e si fa stagionare per qualche giorno. Da grattugiare.
Di pecora
Grassa ma dolce e delicata, si produce dal siero ottenuto dalla lavorazione del pecorino.
Biscotti morbidi alla ricotta
Per 12 biscotti ⧫ preparazione: 1 ora
Ingredienti
250 g di ricotta di mucca magra
150 g di farina 00
130 g di zucchero
Un cucchiaino di lievito per dolci
10 grammi di cacao amaro
Preparazione
Ponete la ricotta, la farina, 120 g di zucchero e il lievito in una capiente ciotola, e impastate velocemente fino a ottenere un composto omogeneo. Dividete l’impasto in due parti uguali, in una delle due parti incorporate il cacao amaro e lavorate velocemente con le mani fino a quando il composto sarà omogeneo. Avrete ottenuto due impasti:uno scuro, al cacao, e uno chiaro.
Formate 12 palline con l’impasto scuro e 12 con l’impasto chiaro. Su questa superficie infarinata, ponete ciascuna pallina e lavoratela in modo da formare dei cordoncini. Attorcigliate ciascun cordoncino bianco con un cordoncino scuro per formare una treccia.
Disponete ogni treccina su una teglia ricoperta di carta forno, cospargete la superficie dei biscotti con lo zucchero rimasto e mettete in forno già caldo a 170 gradi per circa 20 minuti:
i biscotti dovranno essere appena dorati e ancora morbidi.
Servite sia tiepidi che freddi.

La ricotta è un latticino particolare: è ricca di acqua più di altri derivati del latte e questo abbassa molto il suo valore calorico. Le sue proteine sono delle sieroproteine ricche di aminoacidi ramificati come valina e leucina, molto ricercate dagli sportivi perché fondamentali nei processi di rigenerazione muscolare. Hanno anche il vantaggio di essere amminoacidi con alto potere saziante: la ricotta, quindi, è un alimento nutriente ma, allo stesso tempo, dietetica. La presenza di farina e zucchero arricchisce di carboidrati questa ricetta dando completezza energetica.
