…Spinaci un pieno di vitamine
Nonostante non sia in grado di apportare il nostro organismo tanto ferro quanto ci raccontava Braccio di Ferro, gli spinaci sono una verdura eccellente, ricca di fibre, minerali, carotenoidi e vitamine (soprattutto vitamine del gruppo B, vitamina C e acido folico). Inoltre, condirli con il succo di limone è utile per favorire l’assorbimento di ferro e calcio ( la cui assimilazione è limitata dalla presenza di acido ossalico). Se li mangiate da soli, meglio farli appassire in padella che lessarli.

Ingredienti
35 g di pasta frolla
65 g di spinaci
20 g di prosciutto cotto a cubetti
10 g di parmigiano reggiano
1/2 uovo
1/2 tuorlo

Preparazione
Mettetegli spinaci in una padella e fateli cuocere per 5 minuti (senza aggiungere acqua,scongelando avranno liquidi sufficienti per cuocere. Sbattete, nel frattempo, con una forchetta l’uovo in una ciotola, aggiungete il parmigiano grattugiato e il prosciutto, regolate di sale. Mescolate e tenete da parte.
Toglietegli spinaci dal fuoco, fateli raffreddare qualche minuto e poi metteteli in una ciotola capiente; incorporate l’uovo con il formaggio e il prosciutto.
Disponetela pasta sfoglia in uno stampo monoporzione, distribuite il ripieno su tutta la superficie arrotolate per chiudere il tutto.
Spennellatela superficie del rotolo con il tuorlo sbattuto, mettete in forno già caldo a 180° e fate cuocere per 15-20 minuti. Controllate la cottura: appena prende colore, il rotolo è pronto.

Mondate e lavate 210 g di fagiolini e fateli cuocere in acqua, finché non saranno morbidi ma ancora sodi. Scolateli, trasferiteli in una ciotola e conditeli con succo di limone, olio extravergine d’oliva, sale e pepe.
