Sformato di verza e patate
Lo sformato di verza e patate è un secondo piatto o un piatto unico vegano. Le verdure sono fondamentali per il nostro organismo: saziano, sono ricche di vitamine e minerali e grazie all’elevato contenuto in fibre importanti anche contro la stitichezza.
Facile/ 1h e 50 minuti /per 6 persone
Ingredienti
- 500 g di patate
- 300 g di bietole lessate
- 8 foglie di verza
- 100 g di verdure per soffritto tritate surgelate
- 3 uova
- grana padano grattugiato
- noce moscata
- 8 foglie di salvia
- burro
- olio extravergine d’oliva
- sale e pepe
Preparazione sformato di verza e patate
1. Lessate le patate in una pentola con abbondante acqua salata per circa 40 minuti dall’ebollizione. Scolatele, sbucciatele e schiacciatele con l’apposito attrezzo. Fate insaporire le bietole in una padella con un cucchiaio d’olio a fuoco vivo; salatele e pepatele, lasciatele raffreddare e tritatele fini . Soffriggete le verdure da soffritto in un’altra padella con due cucchiai d’olio. Unite le bietole al purè di patate con le verdure soffritte e le uova sbattute con sale, pepe, una grattatina di noce moscata e tre cucchiai di grana.
2. Scottate le foglie di verza in acqua bollente, scolatele e stendetele ad asciugare su un telo. Foderate uno stampo a bordi alti di circa 20 cm di diametro con 6 foglie, lasciandole sbordare. Riempite lo stampo con il composto di verdure, stendetevi sopra le foglie rimaste e chiudete ripiegando le precedenti verso l’interno. Condite con un filo d’olio, coprire con un foglio dell’alluminio e cuocete a bagnomaria in formo caldo a 180° per circa un’ora. Capovolgete lo sformato su piatto di portata ampio, decorate con le foglie di salvia lavate e fritte in poco burro e servite subito.
UN TOCCO IN PIU’
Per un effetto filante, riempite lo stampo alternando
uno strato della farcia preparata con 1 di fettine di fontina.
Potete anche aggiungere 100 g di prosciutto cotto crudo tritato
o di pancetta a dadini.
