Stracotto al vino bianco
Lo stracotto al vino bianco è una ricetta a base di carne di vitello, un secondo piatto davvero gustoso e saporito che prevede una cottura abbastanza lunga e la preparazione di un sughetto per guarnirlo e insaporirlo una volta portato in tavola.

Ingredienti
- 800 g di girello di vitello
- 1 carota
- 1 cipolla
- 1 costa di sedano
- 1 rametto di rosmarino
- 1 foglia di alloro
- 1 spicchio d’aglio
- 1 bicchiere di vino bianco
- 1 bicchiere d’ acqua
- 4 cucchiai d’olio
- 1 noce di burro
- 1/2 cucchiaino di maizena
- Sale e pepe
Preparazione stracotto al vino bianco
- Legate la carne con lo spago da cucina in modo che in cottura mantenga la forma. Scaldate una casseruola con l’olio, il burro, l’aglio intero, l’alloro e il rosmarino. Unite il girello e rosolatelo su tutti i lati per sigillare i pori ed evitare la fuoriuscita di liquidi. Salate, pepate, eliminate aglio, alloro, rosmarino. Unite carota, sedano e cipolla a pezzetti, versate acqua e vino e procedete con la cottura a fiamma bassa e con un coperchio. Sarà necessario anche un’ora e mezza di cottura.
- A questo punto fate raffreddare la carne per un paio d’ore prima di affettarlo. Nel frattempo frullate il sughetto con la polpa delle verdure e aggiungete la maizena sciolta in acqua fredda alle salse in ebollizione per addensarla ulteriormente.
Girello o Magatello
Il magatello è un taglio caratterizzato da una delicatezza e dolcezza molto particolari, tanto che il pezzo potrebbe quasi essere scambiato per filetto. Si tratta di un taglio pregiato e povero di grassi, adatto alla preparazione di arrosti; ma, soprattutto, è il taglio che si usa per fare il vitello tonnato, grande classico della cucina piemontese, ricetta sulla quale si sono azzuffati alcuni dei più grandi chef italiani.
