Tagliatelle fritte
Le tagliatelle fritte sono un piatto sfizioso preparate con la pastella, fritte nell’olio di semi e servite con la salsa di pomodoro e foglie di basilico.
Ingredienti per 4 persone
- Tagliatelle all’uovo 500
- 2 uova
- Farina g: 200
- Birra: 1 decilitro
- Salsa di pomodoro g: 400
- Parmigiano g: 60
- Basilico
- Olio extravergine d’oliva
- Olio di semi
- Sale
Preparazione tagliatelle fritte
- In una ciotola sbattete le uova con la farina, salate, versata a filo la birra, continuate a sbattere, fino a ottenere una pastella, coprite con la pellicola trasparente e conservate in frigorifero per 30 minuti.
- In un tegame con l’olio cuocete la salsa di pomodoro con qualche fogliolina di basilico e salate.
- Scottate le tagliatelle in acqua salata, scolatele, immergetele prima nella pastella freddo e poi nell’olio di semi caldo, friggete, sgocciolate asciugate sulla carta assorbente e servitele con la salsa preparata e il parmigiano.
Le tradizioni antiche di vari paesi sembrano attribuire poteri discordanti al basilico, concordando però sulle sue proprietà magiche e sulla necessità di trattare con molto rispetto questa piantina di basilico. Così, per esempio, Plinio scrive che, se si deve usare il basilico per delle pratiche magiche, occorre coglierlo solo con la mano sinistra, senza strumenti e in una notte di luna crescente.
In India, il basilico viene coltivato con grande  religiosità esiste un tipo di basilico sacro alla moglie del dio Visnù, nessuno osa cogliere una piantina senza un preciso motivo, e quando lo fa ricorre a una serie di rituali. Nel Malabar la profumata piantina cresce intorno ai templi.

Oggi forse il  basilico è forse solo l’erba aromatica dell’estate, l’erba che entra in cucina per aromatizzare le salse di pomodoro fresche, per fare da base al gustoso pesto ligure, per conferire un tipico
aroma alle zucchine, fagioli, funghi, piselli e, perché no anche a qualche dolce alla frutta. Si può anche preparare un aceto balsamico al basilico: basta versare del buon aceto caldissimo su qualche fogliolina, lasciare macerare qualche giorno e filtrare.
