La Torta di patate dolci e frutta secca è un dolce prelibato, realizzato con le patate dolci americane, che sono anche un’ottima fonte di vitamine. La torta di patate dolci e frutta secca oltre alle patate dolci contiene la frutta secca che oltre a conferirle un gusto buonissimo ha degli effetti benefici sul nostro organismo.

Ingredienti per 6 persone
- 500 g di patate dolci
- 1 litro di latte
- 150 g di uvetta sultanina
- 30 g di pinoli
- 40 g di gherigli di noce
- 60 g di burro
- 80 g di zucchero
- 1 cucchiaio di farina
- 1 baccello di vaniglia
- 3 uova
- Zucchero a velo
- Gelatina di albicocche
- Sale
Preparazione
- Sbucciate le patate e fatele cuocere nel latte con la vaniglia per 15 minuti; scolatele, schiacciatele e mescolatele con il burro fuso e la farina.
- Rompete le uova, raccogliete gli albumi e montateli con un pizzico di sale e un cucchiaio di zucchero. Montate i tuorli con lo zucchero rimasto e incorporateli alle patate.
- Fate tostare i pinoli in una padellina sul fuoco, mescolando. Sminuzzate le noci grossolanamente; tenete da parte alcune intere per la guarnizione e unite il resto della frutta al composto, compresa l’uvetta ammollata e asciugata.
- Incorporate gli l’album, A poco a poco mescolando delicatamente. Rivestite una teglia con carta forno bagnata e strizzata e versatevi il composto. Cospargete con lo zucchero.
- Infornate a 180° per 40 minuti circa, finché lo zucchero in superficie inizia a sciogliersi e a caramellare. Sfornate e lasciate raffreddare.
- Trasferite il dolce su un piatto da portata, eliminando la carta da forno sottostante. Disponete al centro la frutta tenuta da parte e cospargete la superficie con lo zucchero a velo.
- A piacere, potete spennellare la superficie della torta con della gelatina di albicocca: in questo modo la frutta aderirà meglio al dolce.
