Torta di riso
La torta di riso è un dolce tipico dell’Emilia, è conosciuto anche come dolce degli addobbi perché veniva preparato solitamente durante le feste di celebrazione del Corpus Domini. La torta di riso è un dolce genuino, di facile preparazione e riscuote grandi apprezzamenti ogni volta che viene portata a tavola!!
Ingredienti
Per la pasta:
- Farina: 400 g
- Burro: 100 g
- Uova: 1
- Lievito per torte salate: 1 bustina
Per il ripieno:
- Riso: 200 g
- Salsiccia: 200 g
- Formaggio grana: 100 g
- Burro: 70 g
- Uova: 1
- Vino bianco:1 bicchiere
- Cipolla: 1/4
- Sale
- Pepe
- Zafferano
Preparazione della torta di riso
Ripieno: far rosolare nel burro la cipolla e la salsiccia; aggiungere quindi il vino e, dopo qualche minuto, versare il riso, diluendo con acqua bollente, quando necessario. A metà cottura unire lo zafferano, precedentemente sciolto in poca acqua calda. Far cuocere il riso al dente, togliere il tegame dal fuoco ed amalgamare l’uovo sbattuto. Salare, condire con un pizzico di pepe e unire il formaggio grattugiato.
Pasta: preparato il ripieno, disporre sulla spianatoia la farina a fontana; sgusciate l’uovo ed immettervi un pizzico di sale, il burro liquefatto e freddo e, da ultimo, il lievito per torte salate. Impastare il tutto con graduale aggiunta dell’acqua necessaria, lavorando per qualche minuto. Dividere l’impasto in due parti uguali, stendere con il mattarello e ottenere due dischi adatti ad una teglia per crostate.
Torta: disporre uno dei due dischi di pasta nella teglia, imburrata e spolverata di farina, rialzandolo leggermente sul bordo. Versare il ripieno, livellando. Ricoprire con il secondo disco e riunirlo al primo pizzicandolo sull’orlo. Bucare ripetutamente con forchetta la superficie e passare in forno caldo. Tempo di cottura 35 minuti a temperatura moderata.
