Vitello al pompelmo
La ricetta di vitello al pompelmo è una ricetta davvero speciale perché insaporita agli spicchi di pompelmo, un agrume dalle proprietà eccezionali, ricco di vitamine e fibre e con poche calorie.

- 4 nodini di vitello o filetto di maiale
- 2 pompelmi
- 1 bicchiere di Brandy
- 1/2 bicchiere di vino bianco secco
- 4 carote
- 20 g di farina
- 1/2 cucchiaino di zucchero
- 90 g di burro
- Sale
- Pepe
Preparazione vitello al pompelmo
1. Raschiate le carote, spuntatele, lavatele e riducetele a rondelle. Sciogliete 40 g di burro in una padella ampia e fatevi insaporire le carote per qualche istante. Salate, pepate, bagnate con un po’ d’acqua, coprite e cuocete per 20 minuti a fuoco medio.
2. Sciogliete 30 g di burro in un’altra padella e fatevi rosolare i nodini su entrambi i lati, poi scolateli e teneteli in caldo. Eliminate parte del grasso di cottura e diluite il resto con il succo di un pompelmo mescolato con il vino, il brandy e lo zucchero.
Lasciate ridurre il liquido della metà, a fuoco vivo.
3. Sbucciate a vivo il pompelmo rimasto e prelevate delicatamente gli spicchi con un coltellino ben affilato. Lavorate il rimanente burro in una ciotola con la farina e, fuori dal fuoco, incorporatelo al fondo di cottura.
4. Mettete la casseruola nuovamente a fuoco basso e unite i nodini, le carote con il loro fondo di cottura e gli spicchi di pompelmo. Fate insaporire per qualche minuto, mescolando con un cucchiaio di legno, sistemate tutto su un piatto da portata riscaldato e servite subito.
