Zuppa di fagioli con radicchio
La zuppa di fagioli e radicchio è un primo piatto che abbina i legumi con le verdure e fa di questo un piatto completo e nutriente. Il radicchio è un’alleato prezioso per la nostra salute perché è un potente antiossidante, contrasta i radicali liberi ed è utile contro stipsi e colesterolo alto. I fagioli hanno ottimi valori nutrizionali, sono ricchi di carboidrati e con un buon apporto proteico e hanno un contenuto ridotto di grassi. La zuppa di fagioli con radicchio è da non perdere!!

Ingredienti per 4 persone
- Fagioli borlotti freschi g : 600
- Radicchio rosso di Treviso g:400
- Patate g: 400
- Pomodori pelati g: 200
- Cotenna di maiale g:100
- Brodo vegetale
- 1 spicchio d’aglio
- Olio extravergine d’oliva
- Sedano
- Carote
- Cipolla
- Sale e pepe
Preparazione zuppa di fagioli con radicchio
- Mondate, sfogliate, lavate e asciugate il radicchio.
- Lavate, sbucciate e tagliate le patate a dadini.
- In una casseruola con l’olio e l’aglio rosolate le verdure mondate, lavate e tritate.
- Togliete l’aglio dalla casseruola, versate i fagioli, le patate, i pomodorini e la cotenna, coprite con il brodo, continuate la cottura, fino a quando i fagioli si ammorbidiscono, salate, pepate e lasciate intiepidire.
- Servite la zuppa nel piatto da portata con il radicchio.
